- 3 cups unsalted cashews
- Sweetener substitute for 1 cup sugar
- 1 tbsp cinnamon
- 1/4 cup water
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 cup toasted coconut flakes

- Heat a large skillet.
- Add sweetener, cinnamon, salt, water and vanilla extract.
- Stir consistently.
- When the sweetener dissolves, stir in cashews until crystallization occurs.
- Remove mixture, spread and cool on a plate for 1-2 minutes.
