Ingredients

  • 6 medium potatoes (2 pounds)
  • 1⁄2 lb bacon bits
  • 1⁄2 cup finely chopped onion
  • 1⁄3 cup sweet pickle relish
  • 1 cups mayonnaise
  • 2 teaspoons sugar
  • 2 teaspoons celery seeds
  • 2 teaspoons apple cider vinegar
  • 1 teaspoons mustard
  • 1 cup thinly sliced celery
  • 2 hardboiled egg, coarsely chopped

Directions

  1. Cook red potatoes in boiling, salted water until tender.
  2. Drain, peel, and cube potatoes.
  3. Mix bacon bits, onion, relish, mayonnaise, sugar, celery seeds, vinegar, and mustard in  a large bowl.
  4. Add potatoes and celery slices to the mixture, and toss lightly to coat potatoes.
  5. Carefully fold in the chopped eggs.
  6. Cover, and chill before enjoying your Savory Potato Salad.
