- 1 cup brown sugar
- 1/8 tsp salt
- 1/2 cup butter
- 1 (20 oz) can of pineapple
- 10 maraschino cherries, halved

- 3 eggs, separated
- 1 cup white sugar
- 1 tablespoons butter, melted
- 8 tablespoons pineapple juice
- ¼ teaspoon vanilla
- 1 1/4 cup flour
- 1 teaspoon baking powder

Directions
Topping
- In a large iron skillet, melt brown sugar, salt, and butter. Stir often to prevent burning until bubbling.
- Place slices of pineapple on the melted sugar and butter.
- Reduce heat while making cake batter.
Cake
- Preheat oven to 350F.
- Beat yolks of eggs and butter with white sugar to a cream.
- Mix in pineapple juice and vanilla.
- Mix and sift flour and baking powder, then add to the batter.
- Fold in stiff egg white.
- Pour batter over pineapple melt in skillet.
- Bake for 40 to 50 minutes.
