Apple Sauce

4 POUNDS APPLE, peeled, cored, chopped
1 cup apple cider
1/4 cup sugar
½ tsp Kosher salt

1 tablespoon freshly squeezed lemon juice
1/2 teaspoon ground cinnamon

1. Combine the apples, 1 cup cider, sugar, 1/2 teaspoon salt in a large pot.
2. Bring to a simmer over medium-high heat, stirring occasionally.
3. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
4. Stir in the lemon juice and cinnamon.
5. Cool for 5 minutes
6. Mash
7. Store in an airtight container in the refrigerator for up to 5 days.
