  • 3 cups unsalted cashews
  • Sweetener substitute for 1 cup sugar
  • 1 tbsp cinnamon
  • 1/4 cup water
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup toasted coconut flakes

  1. Heat a large skillet.
  2. Add sweetener, cinnamon, salt, water and vanilla extract.
  3. Stir consistently.
  4. When the sweetener dissolves, stir in cashews until crystallization occurs.
  5. Remove mixture, spread and cool on a plate for 1-2 minutes.
