Ingredients

Topping

  • 1 cup brown sugar
  • 1/8 tsp salt
  • 1/2 cup butter
  • 1 (20 oz) can of pineapple
  • 10 maraschino cherries, halved

Cake

  • 3 eggs, separated
  • 1 cup white sugar
  • 1 tablespoons butter, melted
  • 8 tablespoons pineapple juice
  • ¼ teaspoon vanilla
  • 1 1/4 cup flour
  • 1 teaspoon baking powder

Directions

Topping

  1. In a large iron skillet, melt brown sugar, salt, and butter. Stir often to prevent burning until bubbling.
  2. Place slices of pineapple on the melted sugar and butter.
  3. Reduce heat while making cake batter.

Cake

  1. Preheat oven to 350F.
  2. Beat yolks of eggs and butter with white sugar to a cream.
  3. Mix in pineapple juice and vanilla.
  4. Mix and sift flour and baking powder, then add to the batter.
  5. Fold in stiff egg white.
  6. Pour batter over pineapple melt in skillet.
  7. Bake for 40 to 50 minutes.
